- Duck terrine, red onion jam, caramelised figs & mustard emulsion
- Beetroot tartare, goat’s cheese mousse, candied walnuts, radish & beetroot gel

- Confit duck leg, pomme gratin, Romanesco cauliflower & duck jus
- Pan fried seabass, roasted courgette, butternut squash puree & dill butter sauce
- Asparagus & pea risotto, finished with roasted asparagus & pea salsa
